Sweet, Spicy and Savory Strawberry Cups

With strawberries in season, here is an MTS post with an idea for an easy creative snack (horsdovers) using strawberries with a hint of cayenne, a shred of mint and a bit of tart olives and is paired with creamy asaigo cheese. The combination of various flavors are sure to excite your audience.  By the time you inform your family or friend about snack time this snack will ready for the platter. Who says fancy appetizers are for parties only.  Self-indulgence ain’t a sin :) .

Strawberry phyllo cups 1

Kind of food: Appetizer
How long: 5 min
Makes: 8 pieces
Pots and Pans: Platter, microwave or a small vessel to warm.

Ingredients
8 Phyllo cups (available in the frozen food section along with pie crusts, but varies from store to store)
4″ X 4″ piece of Asiago or your favorite cheese
1/4 cup fresh strawberries sliced to small pieces that can be accommodated in phyllo cups
2 Tbsp sliced olives
3 Tbsp 0f jelly (MTS suggestions – Gauva, Orange maramalade)
1/2 tsp Cayenne pepper
2 Tbsp Mint (finely chopped)

How to make
Remove phyllo cup from the casing and set it aside.  Cut the cheese  into 0.75″X0.75″ pieces that will fit in the phyllo cups. Microwave the jelly with cayenne pepper for 10 – 20 seconds until the jelly acquires a flowing consistency. Place the cut strawberries and sliced olives on top of the cheese or along the side.   Drizzle 1/2 tsp of the warm jelly on the strawberries and garnish with finely chopped mint just before serving.

Note: To make this recipe ahead place the cheese and strawberry on the phyllo cups and cover it with seran wrap.  Leave it at room temperature.  Drizzle the jelly and garnish with mint just before serving.

Tips, tricks and alternatives
You could sprinkle a small pinch of curry powder instead of the cayenne pepper for an added kick.  If you have left over sauces hollandaise or bechamel sauce, you could use that too.

Dessert coffee

Coffee after dinner is always a great way to end the night. A dessert coffee drink can be even better. Making a pot of fresh coffee? Well, make it a lot more interesting and make it even an alternate for a dessert drink. This recipe is a very simple, delicious and packs a whole lot of coffee flavor. Your guests are sure to be impressed with its look, taste and its simplicity.

Dessert coffee drink

Kind of food: Drink
Makes: 2 drinks
How long: 5 min – 10 min
Pots and Pans: Blender and coffee mugs

Ingredients
1 cup coffee ice cream
1 cup freshly brewed coffee (or instant coffee dissolved in warm water)
1/2 cup Kahlua (coffee liquor)   (optional)
Whipped Cream  ( a can of instant whipped cream)
Cocoa to dust

How to make
In a blender place the ice cream, brewed coffee and kahlua liquor. Blend till smoot and slightly frothy. Pour into a cappuccino or coffee mug. Top with whipped cream and dust with cocoa.  If the drink its a bit warm then chill or pour over some ice.  tip: You can cool the brewed coffee for a few mintues if you wanted the drink a lot cooler.

Serving ideas
Serve with Dark chocolate to compliment the flavors

Tips, tricks and alternatives
For non-alcoholic option – skip the Kahlua and add little extra coffee for more flavor.
For a Mocha feel to this drink, use chocolate ice cream instaed of coffee ice cream.
For kids or decaf versions – use vanilla ice cream with some decaf coffee and skip the Kahlua.

Valentine Chocolate martini for two – under 5 minutes

This recipe for a chocolate martini is so simple and addictive that you would find yourself  making them endlessly upon request of your loved ones.  It is not a clear martini but a very obviously chocolate looking martini to hold true to its name. This recipe does not call for cream like most chocolate cocktails, there by keeping it heart friendly.

Makes: 2 servings
Pots and pans: Cocktail shaker, microwave safe coffee mug, microwave or stove top

Ingredients
2/3 cup of chocolate syrup (like Hershey or other favorites – available in the dessert/ice cream aisle)
1/3 milk  (2% milk)
1/2 cup vodka
1/2 cup baileys irish cream liquer
1/3 cup Amareto (almond flavored liquor) or Kahlua (coffee liquor)

How to make
In a microwave warm up the chocolate syrup and milk in a coffee mug  until the chocolate syrup and milk are completely homogeneous with each other( 30 seconds – 1 minute).  You could do this on a stove top too on medium low heat.  Let this cool to room temperature.  In the mean time, fill up a cocktail shaker half the way up with ice.  For each serving pour 1/4 cup of vodka, 1/4 cup of baileys,  2 Tbsp of Amareto or Kahlua and 1/2 cup of the chocolate mixture.  Shake the mixture and pour it in Matrini glasses that are rimmed with chocolate sugar*.

Tips,Trick and alternatives
You could prepare this martini with fresh made chocolate syrup by melting chocolate pieces with milk and cooling this mixture.  Check the sweetness of this mixture and if you would like it more sweet add simple syrup or mix in some sugar and warm it up for the sugar to melt.

How to serve
Check our post for rimming cocktail serveware and serve this on chocolotae sugar rimmed martini galsses.  You could sprinkle shaved chocolate on top.

Super bowl ice cream bar

Ice cream – a great option for dessert craving hungry super bowl watchers. But, that doesn’t mean it has to be simple ice cream out of a box slapped on to bowl. You can create your own coldstone or penguin style ice cream bar right at home. All you need is lots of ice cream, a bunch of toppings and bowls. This recipe will help you put together a great ice cream bar.

Ice cream bar

Kind of food: Dessert
How long: 5-10 min
Pots and pans: Ice cream scooper and bowls

Ingredients:
1 tub Ice cream  or more, you can pick a variety of flavors.
1 cup sprinkles
1 cup Cherries
1 cup cookies and wafers (crumbled)
1 cup Chocolate syrup
1 cup Caramel syrup
1 cup nuts – crushed or whole

How to make:
Set out the ice cream in the refrigerator about 30 min before serving or leave it out in room temperature for 10 min before serving. Arrange all the toppings in small cups with spoons.  You also use small paper or plastic cups to ease the cleaning. Stick a ice cream scooper in the the ice cream tub and its all ready to be served.

Fillo shell dessert

Fillo (phyllo) cups are always worth having handy in the freezer. These pastry cups are crispy, cute and tasty. This dessert recipe, uses fillo/phyllo cups to make a fast and great looking dessert.

Kind of food: Dessert
Makes: 15 cups
How long: 15 min
Pots & Pans: Bowl, Small server tray/tier

Ingredients
2 cups Mango Shrikhand (follow recipe) OR 2 cups cool whip (from freezer section near the icecreams) + 1/2 cup Mango puree folded in
1 package Fillo cups (15 pieces – available in stores in the freezer dessert section)
1/4 cup Mange puree for garnish

How to make:
Make Mango Shrikhand as per the recipe or the cool whip mixture. Spoon the filling into the cups. Drizzle a little mango puree on top to garnish and decorate it. Arrange the cups in a nice serving tray or in a tiered arrangement as shown in the picture above.
